In this recipe, I also used dangmyeon (당면), sweet potato starch noodles, which is also common in mandu fillings. The key to making good kimchi mandu is to use fully fermented kimchi.

Then knead it by hand for a few minutes until the dough gets a little softer. Put it in a plastic bag to keep it from the air and let it sit for 10 to 30 minutes on the kitchen counter.

Having a good ratio of fat helps to ensure that the pork stays tender and juicy. The fat also makes the veggies in the dumpling taste more flavorful.
