I Gianluca Paris, Luca - as I am known by everyone, was born in Torino (Turin), Italy and moved to New York City as a toddler. Brought up in a bilingual Italian home, I eventually went on to earn a degree in Hotel/Restaurant Management from Johnson & Wales University in Providence, Rhode Island. There, I met my wife, Lindy (Carolyn Moe) Paris, a Swanzey native and fellow Hotel/Restaurant Degree holder. Lindy and I owned and operated an Italian gourmet shop and catering business in New York City and fine dining restaurant in Westchester County, New York for several years. Our dream, however, has always been to own and operate a Mediterranean restaurant. In August of 2000 we opened our doors and were given the chance to bring our own touch to the restaurant climate in downtown Keene, New Hampshire.
