Start making friends with bartenders in your area. If you find out one of your customers is industry, they are now your best customer. They are your best customer every time they are in your restaurant. If you find out they are a manager at another restaurant/bar, every time they are in you are interviewing.
You gotta be charming, fast, knowledgeable and efficient at the bare minimum. If you’re missing any of those you’ll be just average. People have to like you, you need to be able to bring in regulars. It’s why bartenders make so much more than servers. Being attractive is a massive bonus.
