The trails I ride are fairly flat, but there are some decent hills I need to climb to get from the trailhead to my house. The Sora 11-32 cassette works, but I'm wondering if switching to the Alivio 11-36 might help me on some of these climbs.

I recently upgraded the sl5 to 37mm carbon wheels and that difference feels much bigger than the difference in frame material. So i would probably advise an AL5 plus upgraded carbon wheels. I live in a pretty flat and windy country, so if you live in a hilly place, it may be different.... If you go for an AL5 also look at an 2022/2023 model ...
