The peas aren't overwhelming at all. Their fresh sweet and vegetal flavor is present but subtle, and perfectly highlighted by the lemon in the cake batter and frosting. The cake itself isn't too sweet, which I like, but the frosting does bring it in spades.

I made Sara’s pea cake recently (though not nearly this nicely decorated!) and it was amazing the first day but felt overly dense and dry the second day. Wondering if there is something I could tweak to give it a bit more life.
Ingredients. For the pea cake: 3 cups fresh or frozen peas. 18 Tablespoons unsalted butter, softened. 1 cup granulated sugar. 4 large eggs. 3 teaspoons vanilla extract. Zest and juice of 1 lemon. 3 cups all-purpose flour. 3 teaspoons baking powder. 3/4 teaspoon salt. For the lemon buttercream: 2/3 cup (11 Tablespoons) unsalted butter, softened.
