One of the most important Hanukkah rituals is to recite the Hanukkah blessings and light the candles on the menorah. We say three blessings on the first night and only two blessings — the first and second blessing — for the following seven nights.

Three blessings are said on the first night, and only the first and second blessings are said on the other seven nights. Additional prayers are said and candles lit, however, on the Sabbath (Friday night and Saturday) which falls during Hanukkah.
When lighting the Hanukkah menorah on the first night, there are three blessings to recite. On all other nights, there are only two. Translation. Blessed are You, Adonai our God, Sovereign of all, who hallows us with mitzvot , commanding us to kindle the Hanukkah lights. Blessing 2. Hebrew Text. בָּרוּךְ אַתָּה, יְיָ. אֱלֹהֵֽינוּ, מֶֽלֶךְ הָעוֹלָם, שֶׁעָשָׂה נִסִּים לַאֲבוֹתֵֽינוּ וְאִמּוֹתֵֽינוּ. בַּיָּמִים הָהֵם בַּזְּמַן הַזֶּה. Transliteration.
We say three blessings on the first night and only two blessings — the first and second blessing — for the following seven nights. There is a chant for each of these blessings (#1 and #2 start with the exact same melody) but it is also completely acceptable to simply speak the words of each Hanukkah blessing.
During the eight days of Chanukah, we add the V'al Hanissim ("And for the miracles...") section in the amidah (daily silent prayers) and in the Grace after Meals. In this section we summarize the miracles of the Maccabee victory, and thank G‑d for the "miracles, redemption, mighty deeds, saving acts and wonders" that He wrought for our ancestors.
