    Scallops have become a go-to ingredient on Top Chef over the years, to the point where both judges and fans have often criticized “cheftestants” for using them as somewhat of a crutch. It’s easy to understand why the tasty mollusks are so often chosen, especially in the heat of the moment: Sweet, buttery, and luxe, yet not terribly expensive, they can be prepared in a variety of delicious ways, and—most of all— are incredibly quick to cook. Though they are great any time of year, I love this fresh, springtime preparation, which balances a trio of vibrant green vegetables with a simple gremolata made with lots of fresh mint.     Chile Grilled Cheese Sandwiches

    In the early years of Top Chef, the judges took forever to agree on which contestants should stay and which should go, and conversations often dragged into the wee hours. These days, the judges generally decide more quickly, but during season 7, one particularly long, lively debate required substantial refueling, and Padma Lakshmi introduced Gail Simmons to a favorite late-night snack: melted sharp cheese and spicy chiles on toast. Simmons had to know more! Lakshmi explained that she often ate this popular open-face sandwich as a child in India. A recent taste of the cheese toast at a buzzy Indian restaurant in London inspired Simmons to create her own version. Her grilled cheese crossed with chile-cheese gets a flavor boost from mango chutney spiced with fresh ginger, which lends both floral and peppery notes. Slideshow: More Grilled Cheese Recipes 
    • Za'atar Baked Eggs. Simmons' mother was a cooking and food writer whose lessons at home prepared Simmons for the summer she spent on a kibbutz in Israel as a teenager working in her first professional kitchen.
    • Grilled Scallops with Miso-Corn Salad. In summer, Simmons cooks scallops on the grill until they are just kissed by the flames. She piles them on top of warmed veggies with a bright dressing.
    • Chocolate and Hazelnut Nanaimo Bars. Simmons is an unabashed fan of Nanaimo bars, a treat that is beloved in her native Canada. "For whatever reason, the bars never gained a following south of the border, and I have yet to come across anything like them here," she says.
    • Quinoa and Brown Rice Bowl with Vegetables and Tahini. “While in Los Angeles filming the second season of Top Chef Just Desserts last year, I discovered Café Gratitude, a vegan café with a cult following,” Simmons says.
