Prepare the Pineapple Coconut Cake
1. Preheatoven and spray a 9×13 baking dish with baking spray . 2. Combinethe cake mix, crushed pineapple, vegetable oil and eggs. Beat on low speed for about 30 seconds and then on medium speed for 2 minutes. 3. Transferto the prepared baking dish. 4. Bakeuntil an inserted toothpick comes out clean. 5. Cool for 30 minutes and then carefully poke holes all over the top of the cake.
Prepare the Pina Colada Filling
1. Whisktogether the cream of coconut, pineapple juice and rum extract. 2. Pour over the top of the cake. 3. Restuntil the liquid is fully absorbed and the cake has completely cooled.
Pineapple Coconut Frosting
1. Combinepudding mix and milk and whisk until it thickens. 2. Fold in whipped topping. 3. Add the pineapple and fold into the mixture until evenly combined. 4. Frost the cake. 5. Topthe cake with toasted coconut.
