    My first ringside view experience of a real Christmas celebration was in 1970-something in Nairobi, Kenya. Our Landlady, Mrs. Lucy Coutinho, was originally from Goa, and just as my mother used to go into a hyperdrive mode, preparing munchies for Diwali, "Lucy Aunty" would do the same for Christmas. Her Goan dishes were to die for. Biscuits (or "cookies," in American lingo) of many flavors, fruitcake (I confess, I LOVE fruitcake), cheese straws, and "karanji" (a coconut- & sesame-filled deep fried dumpling). The Indian state of Goa was previously a Portuguese territory and is situated on the shore of the Arabian Sea, south of Mumbai. The cuisine is unique, an amalgam of Portuguese, Western, and South Indian influences: For example, coconuts paired with jaggery (unrefined cane sugar), integrated into European-style dishes. I first made a coconut and sesame shortbread last Christmas at the request of an old school friend, Deirdre Pereira, and did a borderline "Pygmalion." This year's variation incorporates the Ingredients used for masala tea, cardamom, ginger, black pepper, cinnamon
    Konbu Dashi

    Dashi is an essential broth base for most Japanese dishes and can be purchased in most Asian grocery stores. For those who want to make it from scratch, there are several recipes out there, but I find this one is the easiest. This recipe uses konbu (also spelled kombu), a variety of dried edible kelp that is harvested off the coast of Hokkaido and as far south as the Seto Sea. This is a good vegetarian broth that enhances the subtle flavors of Japanese cuisine. It is also a bit friendlier to the Western chef than katsubuoshi, which is made from dried fish flakes and can be very aromatic.

They came from western China and brought with them a unique cuisine that call for the use of spices such as cumin and fennel, which found their way to China along the Silk route. Lamb and mutton are the preferred choice of meat of the Muslim Chinese but you can use any red meat you prefer. The spices in the dish are distinct and extremely flavourful, but the creme de la creme is the addition of lots of chopped spring onion and coriander (cilantro) to complement the meat. Who said that tasty dishes need be complicated?

    Adapted and veganized from Cooking Channel's Chinese Food Made Easy. I used gardein frozen beefless tips for this, but I imagine pieces of seitan would work wonderfully here as well. Serve this with wasabi mayo (recipe below) over some warm flatbread or tortillas...DELICIOUS!! This recipe is so quick and easy to throw together. Please, if you can, take the time to freshly grind your cumin from the whole seeds. I used a mortal and pestle, and it made ALL the difference!

    The only reason I went to Double Chin, a Hong Kong-style cafe in Boston's Chinatown, was to get an Instagram-worthy picture of their signature dessert. Yet by the time I left, it was another dish—a very un-photogenic one—that captured my heart, tummy, and soul. I don't even remember what entree I actually ordered for myself. (Thank you for letting me share your lunch, Alvin!) After one bite of this dish I knew I had to try to make it at home. The dish starts off with a layer of chicken fried rice, which is then topped with a mild coconut curry sauce and finished with a sprinkling of shredded cheese. Then everything goes under the broiler until it gets all bubbly and gooey. This is pure comfort food, my friends. I know it's kind of strange to have cheese on an otherwise Asian dish, but there's actually a pretty strong tradition of Western ingredients being assimilated into Eastern cuisine, long before the more recent spate of fusion restaurants began trending in the United States. Think of the ubiquitousness of mayonnaise in Japanese dishes, cheese on Korean ramyun and ddukbokki, sweetened condensed milk on Hong Kong-style French toast, or Spam in Hawaiian musubi. I thought it was interesting that when I was looking for recipes for this dish online, a lot of them just listed "shredded cheese" as the ingredient, without any reference to what kind of cheese. So I ended up referring to Lady and Pups' Macao's Portuguese Fried Rice Gratin recipe, because 1) I love everything else she does, and 2) it seemed the most similar to what I had at Double Chin. I used chicken instead of fish and marinated it beforehand. I used chicken breast because I prefer white meat, but feel free to use chicken thigh meat if you prefer dark meat. I also made a couple of other modifications to her recipe based on what I had on hand (fewer scallions, water instead of milk) and taste preferences (half the amount of shallots, provolone instead of Gruyere). Please note that this makes quite a bit of food. Mandy's original recipe said that it serves 2, but it would probably be more like 6 Joy-sized servings. And if you're wondering why it's called Portuguese chicken rice, I think it has to do with the fact that Macau was a Portuguese colony up until the end of the last century. Note: For a lazier version of this recipe, just use your local Chinese take-out fried rice and skip adding the chopped up chicken to the curry sauce. Because I totally understand if you just want to get this into your mouth as soon as possible.

    I love cooking with fennel. It's not something a lot of people associate with Indian cuisine but both the seeds, the pollen, and the vegetable itself are staples of the Indian kitchen. When I first started cooking Indian food 23 years ago I was surprised, as I thought that my Italian ancestors had more or less cornered the market on fennel. Next to fennel, I love those little one dollar pre-chopped bags of cabbage for coleslaw one finds in the vegetable section. The way I see it, anytime I can hook one of those bags up with one of my favorite vegetables is a good day. This traditional Indian recipe makes a modern delicious slaw like dish that can be paired with any Indian or Western style meal. It also rocks a barbecue, which goes to prove that everything old is new again.
