I think it's only an issue if there is noticeable damage to it. I doubt any of the stuff they have on display has been played enough to have worn frets, or finish wear, etc. As long as there isn't cosmetic damage, I think it's fine for them to sell those at the listed price.
Guitar Center prefers to send guitars out that are unopened. They will send out floor models if there aren't any available in the warehouse though. If you're worried enough I would just call a store and do the order process over the phone.

If they're out of stock, they will sell you the new one or order you one.
