We're new to Minneapolis, from L.A., and my wife and I wanted good Mexican. Maya Cuisine checked a lot of boxes for us. Service We're vegan and many restaurant workers have no idea what that means. The man at Maya Cuisine did. He calmly walked us through the dishes that were either vegan or could be made vegan -- no rush.

We went to Maya around 3pm on a Monday. There are two different areas of the restaurants, a bar/sit down restaurant area and a Chipotle-like quick service area. At the time we got there, only the quick service area was open, so we all got different quesadillas, taco bowls, and suggested dishes.
