    • In a small bowl, combine the chili powder, kosher salt, paprika, smoked paprika, garlic powder, onion powder, cayenne pepper, black pepper and cumin. Divide the mixture in half and reserve 1 half for later use.
    • Cut the Boston butt into 6 even pieces and place into a 6 to 8-quart saucepan. Add half of the spice mixture and enough water, 3 to 3 1/2 quarts, to completely cover the meat.
    • Place a 4-quart saucepan over medium heat and add the vegetable oil. Once shimmering, add the onion and cook, stirring occasionally, until they are semi-translucent, approximately 3 minutes.
    • While the meat is cooking, place the husks in a large bowl or container and submerge completely in hot water. Soak the husks until they are soft and pliable, at least 45 minutes and up to 2 hours.
    • To prepare the filling, first heat a few tablespoons cooking oil in a large Dutch over medium-high to high heat. Pat the pork dry and season generously with salt and pepper.
    • Lower the heat to medium. Add the onions and cook until softened, about 5 minutes. Add the garlic and spices and cook for another 30 to 60 seconds.
    • Return the pork to the skillet and add enough stock to come approximately three quarters up the sides of the meat. Bring the liquid to a boil, cover, and reduce heat to medium-low.
    • Strain the cooking liquid, discarding the solids. Ladle enough remaining liquid over the meat to make it juicy but not runny. Taste and adjust seasoning.

  3. My Maw maw-in-law taught me how to make hot tamales with this recipe (she learned how to make them from a friend in Texas.) You can adjust the spices to your tastes- my husband loves it when you use tablespoons instead of teaspoons, but I find it too hot.

  4. Oct 9, 2018 · Among the more curious dishes in The Southern Foodways Alliance Community Cookbook are these Mississippi Delta Hot Tamales. Tamales are traditionally Mexican, and the tale of how they made their way into the canon of Southern cooking more than a century ago is a truly American one.

  5. New Orleans-Style Hot Tamales. A spicy, chile-laden filling is rolled in corn husks and then steamed in a flavorful broth. These tamales do take some time, but invite friends over and make it a communal effort or do it in stages, time permitting.
