The third episode of Season 22 of Hell's Kitchen aired on October 12, 2023. In that episode, the chefs served brunch to new Americans, one chef made a punishment more grueling, and another disastrous service occurred.

While returning to the dorms, Brad called being nominated the most humbling and scariest experience he had dealt with, mainly because he had a Cuban mother. As Brad apologized for his performance, Jermaine reassured the former that he had a moment and it was over. Meanwhile, Leigh asked Raneisha for salad pairings on the salmon and scallop dishes t...

The following morning, Sous Chef Christina entered the dorms and had the chefs line up and exit into the kitchen. They saw Ramsay waiting for them, telling them to enter quietly as a choir singing America The Beautiful appeared on the balcony. Claudia realized it was a ceremony for a group of immigrants to become American as she went through the process last year. Claudia called it an honor to be an American and wanted to win so she could live the true American Dream. After the choir finished singing, the immigrants were inducted as Americans, and Ryan swore he would become one someday. Ramsay welcomed the group to America and offered to cook them their first meal as American citizens. Turning to the chefs, Ramsay told them that the first team to serve all their tables and ring the triangle won the American Citizen Brunch Service Challenge.

The menu for the challenge consisted of table-shared crab cakes, fried chicken and waffles, steak and eggs, and a Denver omelet. Both teams received their first orders, and Ramsay told the men not to overthink brunch items. Johnathan felt comfortable cooking crab cakes as he had made thousands before, and got his plate accepted. After Sammi and Raneisha served their crab cakes in the red kitchen, both teams easily pushed them out. Moving onto entrées, Claudia served the women’s chicken and waffles, only for Ramsay to slice into a raw chicken. Ramsay brought the women to the front to show them and asked Claudia what planet she was on. Claudia claimed she was from America, Earth, but her joke did not amuse Ramsay. Ramsay called it embarrassing and told the women to get a grip.

In the blue kitchen, Jermaine told Ryan that the chicken was taking longer than expected as he did not want it undercooked. After the opening night, Jermaine refused to let history repeat and told Ramsay he would be ready in four minutes. In the red kitchen, Raneisha was determined not to repeat Claudia’s mistake and said that chicken and waffles were comfort food for her. Raneisha got the refire accepted, while Jermaine got his attempt out of the kitchen. As both teams pushed out entrées at a careful pace, Ramsay moved on to the next order in the red kitchen. However, a communication breakdown occurred as the women yelled out different times, and Ramsay compared it to a car auction as he watched in disbelief. Carmen claimed she was there to win and tried pushing women to communicate properly. In the blue kitchen, the men were on their following order as Mattias said he would never hear the end of it at home if he served improperly cooked steaks. As Johnathan walked the steaks up, Ramsay had a quick touch and sternly told Mattias not to serve cold steaks again. Jason felt Mattias could not cook to save his life, but the latter served a warm refire. As both teams pushed out orders, they were on their final ticket of the challenge. Both teams worked on the order as Brad prepared the eggs for the men. While the teams got their dishes to the pass, Carmen hesitated on the eggs as she did not want to serve them raw. Brad got his eggs accepted, and after Ramsay served the order, Ryan rang the triangle to solidify the men’s victory.

As the men celebrate, Ryan was glad to finally win a challenge as Ramsay bitterly served the women’s final order. Carmen apologized for costing the women the win but argued that no one was communicating well and that they were rushing to get the order out. However, Raneisha argued that Carmen should have listened to the ticket and timing, which would not have caused the latter to rush. Raneisha screamed at Carmen over the latter’s excuse, which was loud enough for the guests to hear. An annoyed Sandra told Raneisha to stop as they were embarrassing themselves in front of the guests.

The men were rewarded with a Los Angeles-styled pool party at the Godfrey Hotel with a lunch catered by Craig’s. During the reward, the men gazed at Jermaine’s leopard swim trunks, and Johnathan could not believe the latter’s flexibility. During lunch, Mattias said he would never get a meal like that back home, while Brad found a cooked piece of ch...

The women were punished by cleaning up all the confetti in the dining room by hand. Ramsay asked Melissa if she wanted to use her Punishment Pass, but she decided to stay with the women. During the punishment, Leigh said it sucked to lose, and the number of confetti they had to pick up was overwhelming. Meanwhile, Raneisha knew that the staff would look at every nook and cranny to see if they missed something. As the women picked up the confetti, Sous Chef Christina warned them that she would dump a trash bag for every piece of confetti she found on the ground.

Later that day, the women seemingly got all the confetti picked up and put in trash bags. When Sous Chef Christina did a check, she noticed one strand on a booth bench. Melissa claimed it was tape, but Sous Chef Christina saw it for herself and confirmed it was confetti. As Sous Chef Christina scolded Melissa for lying to her, Sandra recalled an old saying her mother told her in Polish about lying. So, as warned, Sous Chef Christina dumped a bag of confetti onto the floor while the women were not amused by Melissa’s attempt to lie. Still, Melissa argued that she could have used her Pass to spend the day by the pool. Also, Melissa felt everyone else was looking out for themselves, which she would do moving forward.

Later that day, the men returned to Hell’s Kitchen, changed, and prepped for service with the women. After some last-minute suggestions from Ramsay and the Sous Chefs, the former asked Marino to open Hell’s Kitchen.

Victor Cruz and Bobby Berk at the chef tables that night, with Alaska and Liam Pace eating in the dining room. Also, Sammi and Devon cooked Cobb salad in the dining room. The men got their first order, and Johnathan thought showing Ramsay he could be a leader by working with Brad would be good. Johnathan got his appetizers accepted while Ramsay called out the first order in the red kitchen. Sandra knew the appetizers would set the beginning of the night and prayed they could make it through without mistakes. Although Sandra got her risotto out, Claudia was late on the lobster tail and frantically poached it. Claudia admitted that she never poached a lobster tail before and had Donya walk it to the front. However, it was raw, and Ramsay told her to heat it up as he would like to get out of the gates strong. An annoyed Carmen told Claudia to wake up, and Sandra could not believe the latter screwed up on something easy. Fortunately, the refire was accepted, and both kitchens sent out appetizers at a steady pace.

As the men began firing entrées, Mattias had confidence that the men could follow through on their challenge victory and wanted that night to be the start of their dominance. However, Mattias’ pan caught fire, and Ramsay was forced to move it off the stovetop and into the sink. Ramsay told Mattias to slow down, and the latter did not want the former to see him in a negative light. As the men worked on Cruz’s order, Mattias had Jermaine send up his chicken. However, it was raw, and Ramsay told off Mattias for serving it for an NFL legend. Seeing that no one was helping Mattias, Johnathan decided to jump in and help the former out by coaching him on the cook.

Forty-five minutes into service, the women worked on Berk’s order as Donya asked Carmen for a time on proteins. Carmen said seven minutes, but Donya said she wanted it done in six minutes as she got annoyed by the former slow performance. When the proteins went up to the pass, Ramsay sent them to Berk’s table. Meanwhile, Devon started conversing with a patron as he worked on the Cobb salad, knowing Ramsay expected him to do so. Mattias had Johnathan walk up his refire in the blue kitchen, but it turned out to be burnt at the bottom. Mattias was unhappy that he served a burnt chicken, and Ramsay threatened with elimination if he did not get it together. Ryan was not pleased with Mattias’ poor performance, but the latter got his third attempt accepted, and Cruz got his order. In the red kitchen, the women worked on their next ticket, but Ramsay told Carmen not to give him indirect timings when she started explaining possible window times. As Carmen kept micromanaging the garnish station, Raneisha got annoyed by her partner’s attitude, demanding that Carmen focus on the meat station. As the orders went to the pass, Ramsay discovered raw halibut and angrily told Donya to baste it. Then, Ramsay had everyone but Donya stand at the pass with him to show how painful it was to wait for a refire when most of the dishes were ready. Carmen did not like disappointing Ramsay as Donya served a burnt refire. Ramsay told Sous Chef Christina to work on the third attempt while he was forced to send out an incomplete order. As the women finally got Ramsay’s pain, they worked on the following order.

In the blue kitchen, Mattias and Jermaine stammered on timings while Brad tried to see if he could help after completing appetizers. However, no one wanted Brad’s help, as Ryan did not want the former to wreck their momentum. As the men sent out the proteins, Ramsay sliced into a blue steak and discovered a broken Wellington. Having had enough for the night, Ramsay kicked the men out of the kitchen and told them to nominate two people for elimination. As the men returned to the dorms, Ryan was frustrated that they failed to complete their second service in a row. Atoye sent out the garnish for the steak in the red kitchen, but Raneisha sent up a raw steak. Frustrated, Ramsay brought the women to the back pantry and showed them the raw steak. Ramsay ordered the women to have a quick meeting and get it together, or else they were done for. Raneisha took responsibility for the raw steak and said the refire could take three minutes. Then, Sammi told her team to return to the kitchen. Raneisha said there was no time to waste as they were in Hell’s Kitchen and served her refired steak. However, it was raw again, and Ramsay kicked the women out of the kitchen, telling them to nominate two people for elimination. Carmen was not pleased to be kicked out after their strong start and felt Raneisha had dropped the ball.

Back at the dorms, Mattias was upset by his poor performance and knew he deserved to be nominated. Jason asked Jermaine who was firing most of the proteins that night, and the latter explained that Mattias worked on most of the meat while he did the Wellingtons. Johnathan felt that Jermaine let Mattias fall that night and commented that he tried to help the latter when the former did not. Jermaine argued that he had his own problems to focus on, but Ryan pointed out that he only had Wellingtons that night and sold six. Still, Jermaine refused to believe he did anything wrong that night, and he and Mattias were committed to the plan. Jason suggested they move on to another subject because they were getting nowhere on the meat controversy. Brad said he had a good start to the evening but felt useless because nobody accepted his help. Jason felt Brad was annoying him, and he could not let the latter ruin his focus on timings. Then, Johnathan told Jermaine and Brad that they should have jumped in to help rather than standing around or looking for help.

Meanwhile, Carmen wanted to focus on what got them kicked out of the kitchen, and Sammi asked her teammates what the first mistake of the evening was. Carmen told Sammi about Donya’s problems on the halibut, but while the latter argued that she owned up to those mistakes, she refused to leave over stupidity. Then, Carmen pointed out that Claudia did nothing to help Donya and felt the former deserved to go home as she was in la la land for most of her time in the competition. Claudia did not feel she deserved to be nominated, even though Carmen brought up the raw lobster tail, and Donya brought up the communication problems between stations. Carmen argued that she tried her best, but Donya felt the former should have been more direct and did not like how Carmen was not taking responsibility. Atoye got annoyed by Carmen’s elongated explanations, and Raneisha pointed out that the latter gave inconsistent timings. After some bickering, Raneisha left the room as she could not stand to be near Carmen and felt the latter was not taking responsibility for her mistakes. After more bickering, a frustrated Sandra told everyone to shut up as they were getting nowhere.

After both teams came downstairs, Ramsay accused them of taking a big step backwards that night. Johnathan announced Mattias as the men’s first nominee and Brad as their second, while Sandra announced Donya as the women’s first nominee and Claudia as their second. During their pleas, Mattias said he was a fighter and wanted to own up to his mistakes that night to bounce back. However, Ramsay snarkily told Mattias that he had made many mistakes to learn from. Then, Ramsay asked Brad why he was nominated, as most of the problems in the blue kitchen were from the meat station. Brad said he was too frantic in the kitchen and not contributing enough, while Claudia wanted to prove to Ramsay she could do well. Then, Donya said she was not the weakest chef for the women and told Ramsay she considered Carmen as her nominee due to the latter second-guessing herself and not communicating well. After listening to their pleas, Ramsay sent Donya and Brad back in line before eliminating Claudia for not helping her teammate when needed and showing an unprofessional attitude due to her ditzy attitude. During her exit interview, Claudia was disappointed that she was going home as she wanted to be a part of the Ramsay family in Las Vegas.

After Claudia left, Ramsay told the chefs that while he was rooting for them to do well, they must commit to their part on their journey. While being dismissed, Mattias was happy to stay, but he knew Ramsay was watching him. Then, Carmen said she had the drive and passion to win and did not understand why her name was called up. Lastly, Brad was annoyed he was nominated for no reason and felt that some people were showing their true colors.
