Steak Diane from a Treasury of Great Recipes by Vincent Price

I have mentioned on this site that my Mother was a French Pastry chef at one of the few 5 star restaurants in the Chicago area in the 70's. I learned a lot from her. Especially my love for wonderful cookbooks, like Vincent and Mary Prices "A Treasury of Great Recipes". If you are a collector of fine cookbooks, this vintage book is a must have for the true connoisseur. This wonderful dish, Steak Diane is from the Famous Whitehall Club in Chicago. This dish is done table-side in the club, but not at my house! I have been making this recipe for years and years. It is always a home run and a sure fire way to impress even the fussiest.

This recipe is from A Treasury of Great Recipes, and the recipe comes from Tre Scalini in Rome. This is a recipe for those of us who don't have ice cream freezer/makers. Freeze in individual molds or in a souffle dish for a wonderful, cold dessert. Not too sweet, but a delight. Six of the cooking hours is freezer time!
    Mushrooms in Cream

This is from a Vincent Price cookbook: "A Treasury of Great Recipes". Use button mushrooms, or a mix of various fresh mushrooms, i.e. chanterelles, shiitakes, porcinis, etc. Makes a nice side dish.
    Apple & Herb Stuffing
    Food.com
Why anyone would make Stove Top after making this, I just wouldn't understand. I made this recipe over 6 years ago and couldn't believe the ease or how it tastes! It's a Thanksgiving tradition now. I'm not a fan of apples baked in foods, but the sweetness of them is so good and gives the dish a great color. The recipe is from a cookbook called "Treasury of Christmas."

Vincent Price Sopa Poblano - Poblano Chile Soup
    Food.com
This recipe is adapted from one in Vincent and Mary Price's "A Treasury of Great Recipes." Although it appears amongst those from the Rivoli Restaurant in Mexico City, it doesn't appear to be from the restaurant itself. "This hearty soup, a sort of Mexican minestrone, is made with both [corn and chiles], as you might expect, but it is the unexpected ingredients that make it so good." Let me tell you... this soup is OUTSTANDING. I've made a lot of soups, and this is one of my favorites. I'll be making it often in years to come!
    Stuffed Cabbage Leaves (Kaaldolmer)
    Food.com
Stuffed cabbage leaves are popular all over the world, and in Scandinavia cabbage leaves are filled with well-seasoned tidbits. This recipe can be prepared in advance and reheated in their sauce just before serving. This recipe is from Scandia's in Los Angeles, and the recipe is from "A Treasury of Great Recipes" by Mary & Vincent Price. This is great served with mashed potatoes and buttered green beans as a main dish, or it can be used as an appetizer serving the individual rolls.
    Veal With Mushroom Sauce
    Food.com
You can use your choice of veal scallopine or veal chops....the scallopine is more expensive, but also more tender. Make the sauce first, quickly saute the veal, and simmer for 20 minutes in the sauce. A wonderful Italian veal dish! Adapted from "A Treasury of Great Recipes" by Mary and Vincent Price, credit given to Passetto's in Rome.
