  5. Preheat oven to 150˚C. Line the base of a 22 -23 cm square spring-form tin with baking paper and spray the sides with baking spray. Place the orange juice, butter, cider vinegar, mixed fruit, cherries and peel in a large saucepan and bring to the boil. Remove from heat and stir in the spices, condensed milk, soda and vanilla.

  6. Preheat oven to moderately slow, 160°C. Line two oven trays with baking paper. Sift flour, icing sugar and rice flour into a large bowl. Rub in butter using fingertips, until mixture resembles breadcrumbs. Press mixture together to form a dough. Turn out onto a lightly floured surface. Knead gently.

  7. Sift the flour. Fold the eggs and essences into the mixture in the saucepan. Add half the fruit and half the flour. Mix gently. Add the remaining fruit and flour. Add the milk mixture. Stir gently until thoroughly combined. Spoon into the prepared cake pan and spread evenly. Bake at 130˚C for 3–3 1/2 hours.
