The mayo-hummus spread adds creamy texture, as well as holding everything together. ## Let’s talk about butter lettuce Butter lettuce works perfectly for this because butter lettuce leaves are thick and luscious (one might even call them buttery), as well as being the perfect size for a hand-held treat.     With my one year blogiversary approaching in over a week, I find it fitting that I should share another skillet cornbread recipe. As I described in my inaugural post, Garlicky Shrimp and Spinach Cornbread, my whole passion for recipe development started when I was chosen to be a finalist in the National Cornbread Festival Cook-Off in South Pittsburg, Tennessee. From the moment the announcer said “Ladies, start your ovens†, I knew I was…well, you can read the rest of that story here: Garlicky Shrimp and Spinach Cornbread. But what I didn’t mention was that I actually sent in several recipes for the contest. And after I started blogging, I had intended to share them; but after a year, I somehow hadn’t managed to do it till now. That’s surprising to me, because they’re pretty darned tasty! For example: Savory Ham and Swiss Cornbread Bake–chunks of ham, sweet/grassy bites of asparagus, and hard boiled eggs, smothered with a swiss cheese sauce on a cornbread crust. Whoa, back up. Hard boiled eggs? Yeah, I got the idea from a casserole that my aunt always makes at Easter time, with asparagus, cheddar cheese, eggs and mushroom soup. The only problem with her version is that she uses canned asparagus. Can we say muuuuushy?!?! Her kids finally convinced her not to make it this year. I’m not sure why they didn’t convince her to just make it with fresh asparagus! Nonetheless, I felt like the dish had great potential to be converted into a skillet cornbread meal. Plus, it’s a great way to use up Easter leftovers. One disclaimer though: When I made this the first time, I put the sauce on the bottom and the everything else on top of it. The ham and asparagus fared okay, but the eggs? They were like chewing on pencil erasers. So I switched things up a bit and put the sauce on top. That way everything remained all cozy and moist underneath. But I kept the picture from the original batch, so that it’d be easy to see what’s inside. Therefore, if you make it, yours will not look the same — but it will taste fabulous!

    There are few things better (or easier) than a fruit crisp. It’s extremely hard to mess it up—even if you aren’t a baker. In many ways, it’s more like cooking than baking; you can riff a little on the recipe based on what’s in season or what you have in your pantry.For the filling, you can try different apple varieties, substitute pears for all or half of the apples, or even throw some berries into the mix. Come summer, you can swap in peaches or nectarines and still use the same topping. You could also try subbing up to half of the flour in the topping with whole-wheat, buckwheat, or any flour you choose. Crisps are a choose-your-own-adventure cooking experience, and there’s lots of fun to be had along the way.Personally, I find the topping easier and quicker to put together in the food processor, but you can totally do it by hand. Just a heads up—it will take a bit longer to get to that perfect no-longer-dry-and-crumbly-but-just-starting-to clump-together stage, which is what you’re looking for in this crisp topping. If you do decide to tackle the topping by hand, cut the butter into thin slices so it’s easier to squeeze through your fingers, and just keep squeezing the butter and flour mixture with your fingertips until it’s perfectly crumbly-clumpy. Double the recipe and keep half in the freezer for impromptu crisps or to sprinkle on top of a baked apple.I love the oohs and aahs I get from my guests when I serve something humble and simple like this crisp. It’s a fabulous dessert to take to a party; just let it cool enough to set up so everything stays put on the journey! It’s a homey and fulfilling way to end any meal, or honestly as a meal (breakfast). Candied ginger in the topping adds a satisfying chew and a zingy bright flavor that leaves you wanting one more bite.

    Mom carried this recipe in. Was shared with her by one of her co-workers at PRC. I omit the pimiento and the bread crumbs. I always add mushrooms. My husband and grand daughter request sliced water chestnuts. Can add peas, broccoli and or cheese.Pick a favorite veggie and it is a meal all by its self. I mix everything in the electric skillet and don't bother with the oven during the summer. Play with this one, create what you like and make it your own.

A great one-pot, family friendly meal with an even better kid-approved acronym, SCRAM :) (Salsa, Cheese, Rice and Meat). This is convenience cooking at its best, a ground meat skillet dinner using salsa and taco seasoning for flavor and cooked rice (and optional black beans) to add heft... If you don't have cooked rice on hand, one (8.8-ounce) package brown or white cooked Ready Rice (90 second microwaveable) can be used. To keep this more kid-friendly, leave out the chopped jalapenos! Leftovers can be rolled up in a tortilla for a burrito filling - or plan on using tortillas as part of your SCRAM meal!
