    Accuracy and Speed

    No matter the thermometer you select, it’s gotta be accurate and fast. When we tested instant-read thermometers, we evaluated this by setting a water bath to 134°F using a sous vide machine (that way the bath was the same temperature, no matter where we stuck the thermometer).
