  2. I think it should be 'people age like wine'. If wine is stored in the proper conditions, yes it can continue to get better with age. If wine is stored improperly, it can go bad and turn to vinegar.

  3. As to fragrance aging like wine, it is possible but never been measured by anyone as far as I'm aware. Some chemicals could denature, get stronger or softer with time but who knows. I would think most "natural" and citrus fragrances would have a harder time aging than a woody or spicy fragrance.
