Pure Bonk: Giant Crusher + Royal Knight's Resolve, no incantation buff. I'm on NG+4 RL 125 and it's still fun. Lazy shield+poke build: start with golden greatshield (buffed with scholar's shield) + any spear/great spear you like (I recommend cross naginata for the bleed) and just poke away.
The Star Fists are arguably one of the best, if not, the best Strength build options in the game. Infuse them to Heavy, buff with either Bloodflame Blade or Cragblade and just watch everything just die and get stance broken by your charged heavies. The best build for bosses by far. Bleed: unsurprisingly. But my fav bleed build is with 54str/45arc using the bloody warped axe. You get great dmg and high bleed on an axe. I personally believe this has the highest dps of all melee weapons, at this level of stat investment.
If you want to make elden ring a casual game then follow this build. Stats: As much vitality and endurance you can spare. Around 20 mind is enough Strength 60+ Faith 30+. Gear: 2x beastmans curved sword with any heavy Ash to increase the strength scaling. I recommend using bloodhounds step for insane dodging.

In my opinion, the three strongest builds in the game are Arcane/Faith, Strength/Faith, and Pure Intelligence. The first two just have a fuckton of versatility that comes with combining strong weapons (some of the best in the game) and various incantations thanks to their respective hybrid seals.
