    We served this at our twin daughters' graduation open house. Since that time, it is our most requested pasta salad. My daughters will make batches of this to take back to college to share with their friends. Scale back the salt and MSG if it suits your tastes or needs, but in this recipe the amounts listed blend in very nicely.

    The amounts listed are only a guideline since I don't even bother measuring please feel free to adjust all ingredients to suit taste but please try not to omit anything all the ingredients blend together perfectly! You could use all mayonnaise but I prefer half mayonnaise and yogurt or sour cream for a lighter texture, if you are making this in advance then add in the diced apple just before serving. If you are a curry-lover then try adding in 1/2 to 1 teaspoon curry powder into the mayo mixture, I think you will be quite surprised at the taste! This is one of the best recipes for chicken salad!... For a luncheon, double or triple the complete recipe and serve this on a bed of lettuce with tomato wedges around the chicken salad then sprinkle more toasted almonds on and around the chicken salad... your guests will rave!

    This recipe came from a Family Circle publication "Quick and Easy Meals-Jan 1979". I have listed the ingredients as published but the amount of curry dressing given in the recipe makes the salad a little too creamy for my taste. I usually add about 2/3 of it to the salad and save the rest to use as a sauce for other things. It is very good with omelets or chicken tenders. Cook time is refrigeration time.

    I sampled this recipe at a local deli and was lucky enough to get the recipe. Never in a million years would I have made this recipe had I not sampled it first -- I was surprised at the ingredient list, but the combination of flavors is delicious!!! The recipe states that "This salad is full of refreshing flavors and can also be used as a relish for meats." I hope that you enjoy it.

    I recently decided to cut out all forms of white and brown sugar from my diet to find out if this elimination would help steady my energy level throughout the day. I'm proud to report that I went without sugar for the entire month of May and plan to continue down this path! I discovered a noticeable difference in my energy level, productivity, consistency and clarity in my thinking after going without sugar for several weeks. Eliminating sugar was not an easy task. Preparing lunch was not too bad. I usually prepared salads with homemade vinaigrette and grilled chicken. Dinner was also easy since I don't usually prepare meals that contain a lot of sugar. However, I quickly figured out that I'd have to be a little creative with meals for breakfast. Since most packaged breakfast cereals contain sugar (even the "plain" varieties). I have learned to make quick "from scratch" breakfast meal using eggs, oats or quinoa, which is a very good source of magnesium. While it does take 15 minutes for quinoa to cook, I have learned a couple of ways to make the most of this time. 1. Make a larger batch. Portion the cooked quinoa into small, single-serve proportions, place them in reusable containers like Ziploc Brand Containers and leave in the refrigerator for up to 5 days. When you are ready to eat, mix in other ingredients you want after you reheat the single-serve bowl and voila - breakfast in minutes! 2. Prepare first thing in the morning. Begin preparing the quinoa just after you wake up and go about your morning routine while it's cooking. Get the children's breakfast ready, finish packing lunches, check backpacks for homework, etc. Within 15 minutes of checking off your morning to-do list, your cereal will be ready!     I no longer get asked to make this salad, its DEMANDED whenever theres a party. The amounts listed are for a family of 4 that will last a couple of days, but increase as much as you want for the summer get-togethers. DO NOT LEAVE OUT THE GREEN PEPPER, if you don't like them, pick around them, they really do make or break this recipe!

    I had some spinach for a salad, but I can never finish those big bags before they turn slimy, so this recipe from meals.com was the perfect way to use the rest of the spinach. The recipe calls for frozen spinach, but fresh works just fine, 2 or 3 cups of it, chopped up in the food processor. I also used 1/3 cup Italian seasoned bread crumbs in place of the bread slices, the ingredient list, however, is being posted in it's original state.
