  3. Traditional Samoan recipes are made from locally available ingredients on the island and the ocean. The Samoan food is comprised of coconuts, corn, chicken (moa), pork (puaa), fish, fruits, and vegetables. One Samoan food, in particular, that is considered a Samoan staple is Taro.

    • Palusami. An iconic Samoan food, palusami is taro leaves cooked in coconut cream to make a rich and creamy dish. It’s traditionally cooked in a hot-rock oven called an umu.
    • Oka. A staple of Samoa and many other Pacific nations, oka is raw fish marinated in coconut cream with a few other spices or chillis for extra flavour.
    • Koko Alaisa. The perfect comfort food, koko alaisa or koko rice is simply boiled rice, koko (Samoan cocoa) and coconut milk! Although it makes a nice dessert, most travellers will try koko rice for breakfast at resorts and beach fales.
    • Supo Esi. Another tropical yet hearty breakfast food, supo esi (or papaya soup) is the Samoan answer to porridge but tastier! The dish is made sweet with coconut milk, papaya and sometimes coconut flakes.
    • Palusami. Palusami is a dish of coconut milk and onions wrapped in taro leaves which are cooked by baking or steaming. Taro is a root vegetable. Its leaves are edible only after cooking properly.
    • Fa’alifu Kalo. Fa’alifu Kalo is a dish of cooked taro. The taro is boiled until it reaches the desired tenderness. The water is drained and replaced with a coconut cream sauce.
    • Faiai Eleni. Faiai Eleni is a dish consisting of fish and coconut cream. In the traditional method, the coconuts are cracked open and the white pulp is scrapped out.
    • Sapa Sui. Sapa Sui is a noodle dish which consists of a combination of meat, stir fried vegetables and aromatics such as ginger and garlic. The meat which can be beef, chicken pork or lamb is cut small and is usually one of the first ingredients added to the cooking pot.
