Using a spatula, gently roll the blintzes in the skillet and cook them evenly until they are a golden brown and have lightly crispy edges. Try not to brown the blintzes for more than 2 minutes. May 17, 2021 · Combine flour, chickpea flour, milk, oil, almond extract, sugar and salt in a bowl. Whisk to combine. Let sit for 20-30 minutes. Lightly grease a non-stick fry pan. Over medium-low heat, pour ⅓-½ cup batter into the pan, swirling to coat the bottom. Cook until the top of the crepe is completely dry, about 3-4 minutes.

Fold the bottom up, the sides in and then the top down so you have a neat parcel. Place on a flat plate or dish, seam down. These can be left in the fridge until you are ready to reheat.
