Depends on the game. Most likely, multiple people contribute different concepts per title. Easiest way to know, is just to read the credits when you finish the game. Though, if you're looking for the artist for a specific monster/character/whatever, then that's much harder to find out.
The first one is an absolute treasure trove of early ideas and concept art. The second has a lot of mid level to finished art. The third is almost all the final art you can easily find all over the internet.
