If sardines aren’t available, try using any fresh fish. I prefer small fish: anything from 5 ounces to 2 pounds is perfect. I also make this recipe once a year with a whole wild salmon—I just triple the rub/sauce elements and cut deep slashes in the fish for holding the seasonings and to help it cook evenly. Look, the world would be a better place if we all ate small fish with the heads on once a month, so go buy some mackerel, sardines, mullet, rouget, small pompano, porgies, skate, you name it…and get your fish groove on.     "Pan-roasting is hot and fierce. Slow-roasting is low and slow. One major advantage of slow-roasting is simplicity. Anything you can braise—short ribs, pork shoulder, lamb shoulder—you can slow-roast with a fraction of the effort. Unlike braising, you can skip the initial browning (which could take 20 minutes for a hefty cut, like brisket), you don't need a ton of aromatics to infuse the liquid, and you don't need a large volume of stock, or any wine, for that matter. Although slow-roasting essentially is a dry-heat method, it's gentle, and the finished succulent texture is similar to what you'd get with a braise. Meats become shreddable and moist, internal fats and collagen melted into tenderness. Slow-roasting coaxes tough-skinned winter squash into total submission (no peeling, no chopping), yields whole heads of cauliflower soft enough to eat with a spoon, gives whole chickens a rotisserie-esque texture, caramelizes and concentrates juicy things like fennel or sweet peppers, and is the most facile and impressive way to cook large fillets of fish." Actual cooking time is just 5 minutes or so, depending on the thickness of your fish. If you can't find grouper, try for snapper, amberjack, or mahi mahi. **Prep time does not include marinating time.**

    The most widely accepted theory on the origin of this wonderful seaside dish states that it dates back to the early 20th century. The story goes like this- the Santa Isabel fishing boat set sail to fish, as always, very early in the morning from the Port of Gandia in Alicante. When lunchtime came, the cook, who had planned on making a seafood paella, realised that he didn’t have any rice. As he had already begun frying the rest of the ingredients and had everything ready, he had to improvise. He found some long fideos in the boat’s pantry, cut it up and used it in the same way he would have used the rice. The result was excellent and went down a treat among the boat’s crew. Nowadays, the technique has evolved a little, for example, in terms of the toasting of the fideos, a key part of this dish. One of the most important parts of a good fideua (or fideuá) is the fish stock or fumet. This stock is often made with rough fish or small rockfish but you can also use fish bones or prawn heads. Or, if you don’t have the time to make it from scratch, you can always buy it pre-made. The following is the traditional fideua recipe from Gandia

Add the heavy cream and dill and stir into the soup. Add the salmon head pieces back into the soup. Salt, to taste. Add more dill, if desired, to taste.

Bring water to a steady simmer and cook until fish and potatoes are tender, about 20 minutes. Serious Eats / Qi Ai. Using a slotted spoon, remove fish parts, dill, and bay leaves from the liquid.

Add the chopped onion, minced garlic, and sliced ginger. Sauté until fragrant. Add the fish head pieces to the pot and cook until they start to brown slightly.

Remove the fish head from the pot and carefully separate the meat from the bones. Discard any remaining bones. Return the fish meat to the pot and add the freshly squeezed lemon juice.

Bring to a boil, then discard kombu if using. Cover and cook for 10 minutes, until vegetables are softened. Add miso paste, stirring until dissolved.

Cover the heads with water in a large pot or Dutch oven. Add the onion, kombu and ginger and bring to a bare simmer. Do not let this boil. Simmer gently for 20 to 30 minutes.
