    My husband's dream meal...cheese topped grilled steak with a side of potatoes, onions and mushrooms. To make this meal an event with a great presentation, while going through the whole process of the recipe, I heat up my largest cast iron pan (12 inches and buttered it to prevent sticking). Once cooked, I mound in the potatoes & mushrooms to keep them warm (careful--hot!). To save time, prep the roasted garlic ahead of time. I listed the cook time for the time it takes to grill a steak. All other time is under prep as these overlap. Note: About the steak. The size of the steak depends on what you can find. If the steak is too large, cut into smaller pieces. Also, seasoning with salt and pepper is fine, but if you want to make it ultimate, use any good marinade or rub.     I had some fried boneless pork chops that were leftover from a previous meal and also some leftover mixed vegetables that needed to be used up. So, this is what came about after combining these leftover with a few other things. If desired, please feel free to add more of the seasonings.And if you want an even more of a hearty type meal,just use this as a topping over biscuits or mashed potatoes.I made this in a cast-iron skillet, but you can use any type of heavy skillet. Gone are unstructured days of summer, and in come meals that are more structured and quick by design. We make hundreds of food-based decisions daily and this can be exhausting. That’s why I like to prepare some basics for the week, so that even if I don’t have a menu planned, I can easily put one together. What do you prepare in bulk to help you get through the workweek? Baked potatoes (both plain or sweet) are the perfect foods to prep for the week. My older son prepped them last night, and so this morning when I wanted to make a hearty breakfast for the first day of school, I took a few of these and used them as my base for eggs and all the good toppings. Volume up and a swipe for the sizzle.

    My friend Christy and I were watching some movies one night and at intermission, decided it was dinner time. Her little boy, Damian was quite the picky tyke and we knew that feeding him would be what we based our meal on. Well, this was something we'd been meaning to try, so we gave it a go.     MUCH better than shop bought crumpets, these are easy to make and are a rewarding and comforting meal for breakfast, tea or supper. Crumpets, pikelets, Scotch pancakes and English muffins: all traditional British tea-time treats but what's the difference? That's a good question! They're all cooked on a griddle or bakestone (a heavy-based frying-pan can be used as an alternative) but crumpets and muffins are both yeast-based. To make crumpets, you need egg rings (available from kitchen or hardware shops) or, if you can get them, special crumpet rings, and they need to be well-greased. More about crumpets: crumpets are flattened round breads which are cooked on a griddle or in a skillet. They are closely associated with English society and culture, and are sometimes confused with English muffins. Although the crumpet and the English muffin share some characteristics, the two foods are in fact very different. Classic crumpets have a smooth round bottom, and a top riddled with small holes. They are served fresh from the griddle or toasted, and can be topped with cheese, bacon, honey, jam or clotted cream - although butter is the traditional crumpet topping. Crumpets are never split, unlike English muffins, and they have a slightly spongy texture which absorbs butter remarkably well. The concept of toasting crumpets over a fire is often associated with companionable rainy days in British fiction. For people who are still confused about the differences between crumpets and English muffins, remember that crumpets have a holey top, they are not split, and they are far less "bready" than English muffins tend to be.
