    This is a dense cake which is very buttery and a lovely almond flavor. Especially good with frosting and can support fondant. I use Marshmallow Fondant which you can make at home and tastes superior to the pre-made fondant. I'm listing the ingredients for the almond buttercream frosting, however I personally prefer to still use Buttercream Icing I recipe, which is my favorite. I have made the soaking syrup without the Brandy when I made this cake for my daughter's birthday and it was still delicious. ***Just a few thoughts on ingredients: I personally feel if I'm making from scratch to buy a good quality extract, I use a Bourbon Vanilla from Madagascar and only use Pure Almond Extract. Be advised that Almond Extract is a strong flavor, so use less if you prefer or halve it with Vanilla extract. I also never use butter with salt in it. Look for unsalted butter or sweet cream butter. I would prefer to control the amount of salt in my recipes. Happy Baking!

    I create this recipe for my birthday after receiving a bottle of Tito's® Vodka. It's like drinking liquid crystal. The sugar doesn't quite dissolve so at the bottom of your glass you get a little slurry of sugar and martini. It's the frosting on the cake! Slurp to your hearts content!

    This fondant is really easy to work with, and tastes pretty good (considering it is fondant!). It is easy to color with gel or paste food colors, and is so smooth and satiny. I had never made a cake with fondant, but when my son asked for a lego cake for his 6th birthday, I knew the only way to make those smooth shiny blocks was to use fondant. While my creation is definitely not in the running for any cake competitions, it made my son happy, and when I need fondant in the future, this is the recipe I will use every time. Greasing your implements is very important--this is some pretty sticky stuff! If you try this, I hope you post pictures, I'd love to see how it turns out for you! This recipe made enough to cover the lego cake in the picture with enough left over that I probably could have covered another brick or two. It should be plenty to cover a two-layer 8-inch round cake with plenty left for decorations. The preparation time includes the time the fondant needs to rest, but does not include the time it will take to decorate your cake--that will depend on the difficulty of your design and how much experience you have with fondant. To color fondant, knead gel or paste food color into your prepared fondant (gloves make this step less messy). Fold the color into the center of the dough to help lessen the mess. It's just like edible play-dough, be creative!

    The recipe for our birthday cake was born from one of the happiest accidents we’ve had at Butter & Scotch. Hours before the opening party for our friends and family, our baker Lindsey baked a cake for us to serve at the celebration. But when she took the layers out of the oven, they all sank! Without time to bake more, we just lopped off the tops of each cake round and frosted them anyway. It turned out she had inadvertently omitted almost half of the flour that the original recipe called for, and in doing so had created the best vanilla cake we’ve ever tasted. We immediately adjusted the recipe to the “mistake” version and still bake it this way at the shop. It’s basically the dictionary definition of a happy accident!
