    Always on the lookout for another tasty crockpot recipe, in trying this recipe, I was attracted by C. Barber's comment that "The pork and vegetables in this dish taste best when cooked slowly. The meat becomes so tender you can tear it with a fork." Sounded good to me! And I was not disappointed. The recipe I have posted here has been adapted from C. Barber's recipe in Prevention Healthy Cooking's 'Eat Up, Slim Down: Tried-and-true recipes and tips from real weight-loss winners' by Jane Kirby and David Joachim. Vary the vegetables - and adjust the quantity of garlic - to suit your taste preferences.

    For many vegetarians like myself, the slow-cooker has been something of a revelation. This vegetarian lasagne is, I think, the perfect demonstration of why slow-cookers are so great for vegetarian cooking. This lasagne is crammed with lentils and vegetables and will make you forget that you aren’t eating meat. This is a dish that, while relatively simple, is bursting with flavour. This is perfect as a meal for friends and family, or as some hearty and healthy comfort food for yourself. Why This Recipe? The preparation here is nice and straightforward, the key is to make sure that you cut your vegetables very finely, if you don’t then they won’t cook the way that they’re supposed to. Another thing I love about this recipe is that there is no need for any pre-cooking. If you are in a rush, you can prepare both the tomato lentil sauce and the vegetable layer beforehand.     This is the 2nd of 3 Indian recipes found in 1 of my Grandparents.com Newsletters. From The Indian Slow Cooker: 50 Healthy, Easy, Authentic Recipes by Anupy Singla, this an Indian-inspired rice pudding described as unlike any you've tried before. Flecked w/golden raisins & sprinkled w/pistachios, it's sweet (w/o being overly so) & flavored by cardamom, a spice commonly used in Indian cooking. Use a 5-qt slow cooker & serve hot or cold. This recipe yields 9 cups, but is easily halved. To make this dish in a 3 1/2-qt slow cooker, halve all ingredients & cont w/the recipe. A half recipe makes 5 cups. There are other recipes already entered for Indian rice puddings, but I didn't find any that used a slow cooker method. I allowed 10 min for ingredient prep, but there is no other real prep involved. *Enjoy!*
