I know it’s illegal to fly over National parks so I won’t, but why does the DJI Fly app not show any restrictions over the Rocky Mountain National park? Does that mean that drone would actually fly but it’s illegal?

Just call Rocky Mountain. It’s literally a rangers job to help with exactly what you’re asking. Take advantage of the free resource! We’d need a lot more information from you to help and none of us manage the backcountry permits. Idk what mileage you’re looking at, physical limitations, preferences for views or elevation difficulty, etc.
Rocky Mountain Flight School at KBJC is my favorite - they'll let you rent one-time for a $12 fee + aircraft rates. Nothing real shiny, but probably the most affordable.
