Light golden brown on the outside with a caramelized onion and sour cream filling. Served on a bed of arugula, with a cream sauce. The potato salad was served on crisp iceberg lettuce, with Mediterranean olives, fingerling and Peruvian purple potatoes, fresh cheese and a light, but tasty white wine vinaigrette.
