    Most scones ARE cooked; they're better that way. What I mean, of course, is that these are made with leftover cooked oatmeal. The only way to get leftover oatmeal in my house is to make extra and hide enough for these right away. There is nothing more comforting on a cold winter morning than a big bowl of oatmeal - except for these scones, with a little butter and honey and a nice pot of tea.

    This is actually more of a cooking method than a recipe. If all steps are followed, you will not have any problem with any of the assertions in the name. You will get melt in your mouth brisket that is so juicy that it won't hardly accept any BBQ sauce, but the flavor will be so good that you probably won't want any. If you want burnt ends, you can certainly make them, but it's doubtful that you will want to. You will need a hot charcoal fire, extra long handled tongs, a smoker large enough to accomodate the meat, a large H.D. foil pan large enough to accomodate the brisket, 8-12 hours, smoking wood (We prefer hickory or mesquite), your favorite BBQ rub.

    This is a classic Oaxacan dish, served with rice. Each family has their own version, this one is made by the Restaurant La Olla, Oaxaca México. A little information: Oaxaca is to Mexican food lovers and cooks perhaps what Florence is to art aficionados. Walking through any village market, or just down the street in Oaxaca is a aromatic as well as visual delight. In Oaxaca, it is difficult for one to walk for very long without ending up in a market and passing a dozen little restaurants. Not only has Oaxaca made significant contributions to the flavors of the world - especially with its extraordinary mole (mo-lay) sauces: sharp, thick, sweetly complex, with top notes of smoke, sometimes clove and citrus and always undertones of dried-chile heat, but the Indians from Oaxaca invented two of the cooking utensils that are still essential in Mexican cooking: the molcajete (stone utensil used to crush and mix spices) and the comal (metal utensil for heating and baking). Oaxaca is justly famous worldwide for its vibrant, inventive, and diverse cuisine. The markets and restaurants produce their succulent, rich moles for which Oaxaca is famous. There are at least seven basic varieties of mole made in the region. Here are nine: negro (black), amarillo (yellow), coloradito (reddish), almendrado (with almonds), verde (green), rojo (red), Manchamanteles (tablecloth stainer) and chichilo negro. There is always mole being served in Oaxaca, such as the coloradito; with its brick-red color of roasted chiles, sautéed spices, and ground, charred bread, it is elusively spicy and with a slightly tangy sweetness, a little smoky, with the fullness of toasted grain and a bit more pungent than the negro or the amarillo, which is especially mild, with its clean chile flavor, a strong top note of cumin and a slightly oily texture.

    What makes this curry special is the 'bhuna' part. This consists of pan-frying the meat with spices. The meat cooks in its own juices, which is what gives the deep flavour. It is a bit time consuming, but the end result is delicious.

    The idea is to take what’s in season—peas or corn or brussels sprouts, tomatoes or leeks, even grated pumpkin or fall squash—and toss it with pasta, adding about 3 to 5 ounces of meat (cured pork, bacon or sausage—I have even been known to dice salami and use it the same way) per half pound. I use this premise in many ways, sweating out a piece of lardo with finely chopped celery, carrots, and onions as the base for a wintry tomato sauce made with canned San Marzano tomatoes, or adding a tasty bit of bacon to peas for a spring pasta. In the fall, I crisp bits of pancetta in the pan and wilt brussels sprout leaves in the fat with a crushed clove of garlic and a few sprigs of thyme. In the summer, I take the classic ingredients for pasta amatriciana and use bacon and cherry tomatoes to make a “summer” version (in quotation marks because, really, Romans would never countenance this being called amatriciana). In the spring, I might make a purée of cooked greens and toss big fat shells with it, then lay slivers of paper-thin prosciutto or pancetta over the still-hot pasta so that the pork just wilts a little from its residual heat. At Porsena, our most famous dish is a twist on the Abruzzi classic of sausage and broccoli rabe, but we make it with North African spiced lamb sausage and mustard greens. As you play around with the combinations, you will see how easy it is to use this recipe as a template and to swap one thing out for another. With more delicate, tender vegetables, such as peas or corn, I use more delicate herbs like basil, mint or lovage (a favorite of mine but you probably need to grow it in your herb garden to find it easily); with stronger, bolder flavors, I add more robust herbs such as thyme or sage. Pea tendrils hold up better, but if all you can find are pea shoots, with tender leaves attached, just toss them in at the very end so they are slightly wilted by the residual heat of the cooked pasta dish.
