    Macerated Summer Fruit Shortcakes with a Dividend

    I've listed below the fruits I used, but feel free to use what you have, or what is newly arrived at the farmers market, or even what you can harvest from your own trees and gardens. I macerated them in a mixture of sparkling wine and campari. The former gives the fruit some zing, while the latter deepens the flavor and adds that fantastic color. The Campari softens the sweet of the fruit, and the fruits soften the bite of the Campari. What goes around comes around. I used my own scone recipe (http://www.food52.com/recipes/11019_cream_scones_sweet_or_savory) and added a teaspoon of organic dried lavender blossoms. Before adding the sugar to the dry ingredients, I whirred it up in a food processor along with the lavender to break it up. A mortar and pestle would do just as well, and be sure to add some sugar for its great abrasive qualities. The lavender flavor blends beautifully with with the fruits, the Campari, and the whipped cream. With just about everything, I guess. To transport on a picnic or camping trip, wrap the scones in a double layer of plastic wrap. Seal the macerating fruit in a good, airtight container. Take along a carton of whipping cream, a bit of powdered sugar to lightly sweeten it, a bowl and a whisk. Whipping the cream by hand is a great job to pass among those awaiting their *dividend*. It certainly doesn't need to whipped to a firm peak. Just enough to give it a little body is fine. Picnicking and camping are great for letting go of perfection. And the dividend? Really now, if I didn't give you an idea of what to do with the luscious macerating solution, or worse, if I'd suggested you toss it out, you would have something to say about it, right? So take along some seltzer water. Divide the macerating liquid among glasses and don't worry about straining it. Seriously, even I don't take a fine mesh strainer picnicking or camping. Divvy up the limes and lemons. Add a few ice cubes - because you always take at least one bag of ice along, right? - and top up with cold seltzer water. Toast to the dividends of summer.

    When I think of picnics, I think of summer, and when I imagine summer food, BLTs and corn on the cob come to mind. What happens if you mix those together and nestle them in a pie crust? You get a full-of-flavor, essence-of-summer, savory, portable pie! Sandwiches get soggy if pre-made, toting multiple corn cobs is cumbersome, but one large pie that's best served at room temp, or ambient outside temp (sun!) is easy and no-stress. I added a dash of pepper to my favorite (family tradition) pie crust which is a flaky yet sturdy crust made from flour, oil, milk and salt. Corn, tomatoes, and bacon (I used speck) evoke the flavors of corn on the cob and BLTs, and in place of lettuce, I use fresh basil. Goat cheese and shallots add depth. Serve this in generous wedges with a crisp rose' or white wine, and you've got a terrific picnic at hand. *If you like the idea of individual pies, this recipe is perfectly adaptable.

    ..."They're cheeky!" (TM) :-) That's the name and slogan of my imaginary company. In my mind I even have caps and aprons with this printed on them, along with a little line drawing of a rotund bun speckled with sesame seeds. You see, when I threaten to drop out of my PhD program, which happens at least once a week, if not more (it's the only way I can keep part of my sanity and sense of autonomy) my plan for what I will do next is to start a bicycle-pulled food stand from which I will sell little stuffed buns as an afternoon snack from 2:30-5pm. The idea for afternoon buns was inspired by the buns they have at the St. John's Hotel. I've never had their afternoon buns, but I read their description of them as "warm little buttock-like buns" and I thought it was the most hilarious and ingenious thing ever. Basically everything Fergus Henderson does is genius. A little stuffed bun is exactly what I want as a snack in the afternoon every day. So, I decided to start working on making them. I've been working on the recipe for some months now - you know, just in case I really do decide to start my company. The idea is that the filling will be different every day, made from really good quality ingredients, based on what's in season, what seems inspiring that day etc. But, there will always be one savory and one sweet option, and if you don't want either of them, well come back tomorrow. But, I really think you want one! I've made them with all sorts of vegetables and cheeses and fruits. Broccoli, gouda and chile flakes. Mozzarella, tomatoes, and basil. Ham and cheese with mustard. Chocolate and a cherry. Jam and cream cheese. Banana and Nutella... I wanted the dough to be the same for both savory and sweet, so after trying a whole bunch of different styles, I opted for an enriched dough that's still a bit south of being brioche rich. It's really pliable and easy to work with when it is cold after its refrigerator rise. Here are a couple of my favorite buns that seem appropriate for this time of year.
