Presumably this Vulcan women represents Sarek's arranged marriage. They either got a Vulcan divorce (perhaps Sybok was raised by her) or she passed away. Later versions of Sarek (from the Kelvin movies and Discovery) show that Sarek did feel love for Amanda, and at least in Discovery he expressed his love for her.
