As to whether you'll get sunset photos, you have to look up the sunset time for your date of travel. It takes a while from getting on the boat in SF to getting off at Alcatraz and hiking up the hill to where you can get good photos, so if you buy the 5:55 PM tickets, pick a day when the sun is setting around 7:00 PM or later.
