However, this ends badly because Iris in baghead form is now the master, and she burns down the pub and escapes into the world.

My reading is she can do whatever she wants. Given the Baghead is a Sorceress/Diviner that can create plagues and manifest natural disasters. She is now Iris/Baghead, but Iris is probably not in direct control imo. But Baghead has a sort of truce now in how she let Iris kill Neil afterwards.
Surprisingly, he ended up burned dead, but the Baghead is still very much alive and residing in the basement. Now, the pub belongs to Iris. But who is this Baghead? Why does it stay in the basement?
