Feb 27, 2024 · Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1-4 hours or until peas are softened. Drain and rinse peas, discarding liquid. Return peas to Dutch oven. Add 2-1/2 qts. water, ham bone, onion, salt, pepper, thyme and bay leaf.

Add the water and bring it to a boil, then reduce to a simmer, with the lid slightly cracked. Let the soup simmer for 2.5 hours or until desired thickness is obtained.

Sort through the peas to ensure there is no debris. Rinse and drain well. In a large pot, combine peas, ham, water, broth, parsley, and bay leaf. Bring to a boil, reduce heat to low, and simmer covered for 1 hour. Add in celery, carrots, onion, pepper, thyme, and salt. Cover and simmer 45 minutes more.
