    I was searching for some vegetarian taco recipes, and found something similar to this. It was very tex-mex though, so I took inspiration from Rick Bayless's book Authentic Mexican (that book is amazing, it is my culinary bible), and put together this recipe. I'm not a vegetarian myself, and sometimes vegetarian meals feel like they're missing something to me. Not this though, the way the flavours and textures of everything come together are very satisfying. It's also relatively easy to put together, the hard part is finding the time to cook the beans and slice the vegetables. For an easier version, use tinned black beans, and substitute the tomatoes, onions, garlic, and serannos with a jar of Herdez salsa. Just be careful when you fry the salsa though, the liquid tends to spatter.

    This salad is more than the sum of its parts. The tartness of the lemon and the sweetness of the corn and avocado go really well together, and the beans provide an earthy backdrop. It's so simple that all the flavors are pure and present. And while it can serve 2-3 people as a side, I will happily eat most of it as my lunch. I started making this many years ago when I was in graduate school; it makes a great lunch, either by itself or wrapped in a tortilla, and can be prepared directly in a jar to take with you. It can withstand a few hours in a fridge, but I wouldn't push past that. If you're serving it as part of a meal, it will be at its freshest and best right away (for ~20 minutes). Variation: add a titch of fresh hot pepper, minced, to make it more of a salsa. If you're using canned beans, I recommend Goya's.

    This is a variation of my Grandmother's beloved sauce recipe that adds a bit more flavor to boring spaghetti. Don't let the number of ingredients fool you, it's VERY easy to make. This yields about 2 gallons of sauce, so plan to use it as a OAMC recipe or cut it in half. It freezes well and makes a great sauce for lasagna, baked rigatoni, or served over spaghetti squash. I use a store-bought canned sauce for the base to save time, but you can use your own if you'd prefer. To make a Southwest version, substitute the stewed tomatoes with a jar of salsa, and add a can of corn and a can of black beans. This sauce depends on the sausage for most of its flavor, so it would probably not make a good vegetarian version, but if anyone comes up with something, let me know!
