I think sentinels are just meant to be a symbol of oppression from a literary stand point: something big and menacing that could potentially kill you, and then being toppled by a smaller albeit more powerful person.
They're kind of like zombies. To a trained, X-Men level mutant combatant, one or even a few basic sentinels are still dangerous, but not a giant threat. But they're mass produced, tireless, and singularly focused on doing one thing and that one thing is kill mutants.
Freljord has currently no ruined champ, but if they got one I'd say Ashe would make the most sense as her getting ruined would cause even more instability among the avarosans, potentially causing a power shift, but Ashe has kinda no relation to Olaf, so I don't think the 2 would fit together.
