There are two main types of Jerusalem artichokes; red-skinned and light-skinned, though most have white flesh. Some varieties are knobblier than others while others are smoother and easier to peel. Here are a few notable sunchokes varieties: Clearwater: Maine-sourced heirloom with white skin and flesh. Passamaquoddy: Purple-skinned tubers.
