Living in the Florida Panhandle, we have seemingly, endless and reasonably priced access to the freshest seafood. We eat a lot of it and much of that is Gulf shrimp. I've come up with many quick meals that showcase the seafood but this is our current favorite. The credit for this recipe is shared amongst the guy that created the vodka sauce concept, the guys at Cool Fish Market and the shrimp. I just brought them all together. But let’s be honest: pork tenderloin will never make your heart race the way a well-marbled rib eye or glistening red snapper does.That is, unless you partner it with a hot grill, wood-fueled fire, and a seductive ally. The lean, mild-tasting meat is made for punchy sidekicks. In this recipe, grilled pork tenderloin is paired with one of my favorite supporting players: a tangy green salsa made from blistered tomatillos, onion, garlic, and serranos, which takes on a complex, caramelized depth from all of the charred and blackened bits. Finishing the sauce with a splash of thickened cream isn’t essential, but it makes everything better, bringing the tart, bitter, and spicy flavors together beautifully.This green salsa can be made up to five days in advance, so it’s a great opportunity to make the most of a lingering fire (from, say, last night’s dinner) and cook ahead—a time-efficient practice that I encourage in my books. Or, you can char the vegetables in a grill basket first, toss them in a food processor, and then puree them into a sauce while the meat rests.Another reason to direct pork tenderloin to the grill? You can use your tongs to roll the meat over the grates for even browning. That means more crispy, delicious exterior—and no panic about flipping, say, a fish fillet or chicken breast without tearing the skin.Serve thinly sliced rounds of pork over a pool of the tomatillo sauce, or pour the salsa over the top.     Salmon is a fish that never really enticed me; it was always boring and seemed to be lacking that extra something to make it more appealing. Lately, fish has been strewn through every magazine and cookbook because the possibilities are endless and it creates a fast, healthy meal. There are so many ways to prepare fish and its so versatile that I figured I might as well give salmon a shot again. The Italian cooking bible, Silverspoon, was my first guide to cooking fish. I remember making a fish fumet for halibut and loved how the broth brought both flavor and moisture to the fish. That memory came to me when I began to see recipes for poaching fish in olive oil. The reviews raved about the silky texture and the juicy meat, so I figured I give it a try. To start out, I figured that I would need a broth; something to finish the salmon off in and also a liquid to braise the broccoli in. After looking through various cookbooks, I came across a mushroom jus in Modernist Cuisine. Why not! Poaching the salmon in the olive oil created the silkiest mouth feel while the it stayed perfectly moist and tender. Finishing it in the mushroom jus helped to add a nice browned surface with a lot of added flavor. To brighten the dish up, I created a pea shout coulis that rounded out the flavor of the mushroom. Together, the dish shed new light on an old classic for me.

    My grandma's recipe, an easy and tasty way mid-week meal made with corned beef, potatoes and onions - simple and packed with flavour. Panackelty is a corruption of the word Pan Haggerty; Panackelty is a baked dish consisting of meat, usually corned beef, bacon or lamb chops, and root vegetables (mainly potatoes and onions) which is left to bake throughout the day in a pot on low heat. Originating in the Sunderland area of North East England, the dish was a favourite of working-class families and was traditionally eaten on Monday as the leftover meat and vegetables from the previous day’s meal could be used. A local version of the popular dish of Shepherd's Pie or Cottage Pie. I have a vegetarian recipe for this recipe, Recipe #423399. Historical Note: The families of miners and shipyard workers would often prepare this meal as it could be slow cooked by a housewife during the day while she continued with other household tasks. A hungry worker coming home would also be especially satisfied with the high in fat and carbohydrate content of the dish. There are endless interpretations of the dish, with different families using different ingredients. Other popular panackelty concoctions will include bacon, sausages, black pudding, beef stock, and occasionally pork or lamb chops and additional vegetables such as carrots. The vegetarian version is called Pan Haggerty, and it is thought that the meat version is a corruption of that word.

    I love the idea of "Cook Once Eat Twice". There are those days when you just can't get into the kitchen, but certainly want a good meal. This recipe fits the bill. My version of a chicken stir fry that can be served immediately, or rolled into phyllo leaves for spring rolls which can be frozen and baked at a later date. Great for entertaining, a healthy snack, or a lighter meal served with a salad and a variety of dipping sauces. Feel free to switch the chicken for beef, pork or shrimp. Any variety of vegetables will work also. Vegetarians in your family? Eliminate the meat completely, for a dish that everyone will enjoy. The combinations are endless. You can use melted butter when preparing the rolls, however I prefer to use cooking spray as it's easier then brushing the extremely thin pastry sheets. Note: cooking time will vary depending on how crispy you prefer your vegetables. Servings sizes and nutritional values will not be completely accurate as posted if you are having just the stir fry, as it also includes the phyllo dough.
