I always liked the idea that Mettaton becomes a huge star on the surface after you get the true pacifist ending unlocking a new mode. In this mode Mettaton is making a movie about Frisk's adventure and so to record the footage you "fight" each of the bosses, the genocide fights could be alternate scenes or something.
