  6. Let the dough rest, covered, for 30 minutes. A loud kitchen timer like our Extra Big and Loud will allow you to move about the house and still hear the timer going off. After 30 minutes, fold the dough again in the same way: north, south, east, west (the order doesn’t matter). Set the timer again and allow it to rest.
