All museums are open, the botanical garden Palmengarten, the Maintower viewing platform, the zoo... Travelling to Mainz takes approx 40 minutes. Imho a bit tight with a 2pm departure from Frankfurt.

    October is "Stadtteilsonntag" (suburb Sunday). Shops outside the inner city ring (former city fortifications today a small park belt around the city center) can open from 1pm to 7pm. Skyline Plaza will be open as it is outside the city center. Zeilgalerie and the whole rest of the shopping street Zeil not.

    Stores are always closed in Germany on Sundays unless there is one of the Sunday shopping dates happening. As posted previously, only 13 Oct. for the rest of this year in Frankfurt. Other cities will have different dates.
