The decrease in phenolic content could be due to breakdown of tissue structure and changes in compound matrix and thereafter leaching-out process ( Zhang & Hamauzu, 2004 ).
Mar 01, 2012 · The total phenolic content of methanolic extract of presently studied grain samples is shown in Fig. 1.The cereals including finger millet and amaranth grains exhibited total phenolic content of 1.05 and 1.07 g/100 g DM, respectively and these values were found to be comparable to those of buckwheat (0.91 g/100 g) and rice (0.92 g/100 g) as reported by Gorinstein et al. (2007).
