This is done so that you see yourself like you're used to when you look at a mirror. Seeing yourself the other way will make you notice asymmetries in your face since you're not used to it.

Sometimes it’s quite legitimate in terms of they are actually following fair use principals (see the overlays Angry Joe puts over clips in his videos) and just don’t want to have to deal with the appeal system.
