Sodium Bicarbonate decomposes to Sodium Carbonate and Carbon dioxide starting at 50°C. Sodium Carbonate however does melt at 851°C, it boils at 1,600°C The decomposition temperature is why Sodium Bicarbonate is useful as a leavening agent in breads or pancakes, it starts releasing CO2 before the dough cooks.
