     Your link uses the https protocol.

     http vs https - for a protocol agnostic reference, use //fonts.googleapis.com/css?family=Source+Sans+Pro:300,400,600,700|Roboto:400,300,700,500,100

     Basically your link uses https but you're referencing the http version of the font. So if you use https - it's a secure page, and as such, it will block non secure resources (especially from 3rd party websites), such as javascript. Or at least may display a warning, explaining that the site is trying to load non-secure content.

     TL;DR: Use font-weight: bold instead of font-weight: 500.

     The issue here is whether your font (Roboto) loaded properly and completely. Different fonts render boldness and italics differently. When it comes to email, remote resources aren't guaranteed to load. Your Gmail session isn't rendering this text in a font that supports medium weight italics; it's either a lighter version of Roboto (without weights) or else a different font altogether.

     note that normal is 400 and bold is 700, leaving 500 somewhere in the middle. There's a little more detail in the variable fonts section:

     Most fonts have a particular weight which corresponds to one of the numbers in Common weight name mapping. However some fonts, called variable fonts, can support a range of weights with a more or less fine granularity, and this can give the designer a much closer degree of control over the chosen weight.

     If no custom weights are given for a font, your software will create them itself, rendering its own italics and bold (weight: 600, at least for me on Firefox on Debian) but no degrees of boldness, so weights of 600 or higher are bold while lower weights are normal.

     In this example, I've pulled font-family and font-weight out into their own classes so you can see the differences between Roboto loaded without and then with weights. I've also adjusted the white space and wrapping to minimize scrollbars.

     I was not able to reproduce your issue of losing boldness just for the italicized text (perhaps a browser or OS difference), but I still believe I've diagnosed and reproduced your issue correctly.

     Since this is email, you can't be assured that remote resources will be loaded and you don't want to attach a font to the email. Expect most of your non-Gmail readers will see this in other fonts.

     For broader support, I suggest using font-weight: bold. If you want something lighter, consider something like text-shadow: -0.02ex 0 currentColor, 0.02ex 0 currentColor; instead of a font weight (see this answer).

     I was not able to reproduce your issue of losing boldness just for the italicized text (perhaps a browser or OS difference), but I still believe I've diagnosed and reproduced your issue correctly.

     font-weight in numbers is better then then default bold because in numbers you can adjust the bold as per your design requirements.

     The value of the lighter weight relates to the weight value of the parent element. In the case of @font-face there is no parent element, and therefore a lighter font-weight cannot be determined.

     So yes, you'll have to use font-weight: 100; if that's your desired weight.

     It's worth noting that 100 isn't equal to lighter. The value of lighter depends on the parent value. If the parent value is 900, for instance, lighter will set the value to 700 (as noted in the specification).
