I have come across many recipes but keep coming back to his classic.Food.comThis is the basic recipe that my mother used while we were growing up. This recipe comes straight from the Betty Crocker Cookbook that I've used most of my life. I just love this recipe because it makes soft, tender, very tasty, delicious dinner rolls. I often make the following tweaks to the recipe: I use half bread flour, 2 tsp of salt, 1.25 cup of mashed potato. Since shortening is so expensive now, I substitute one cube of butter plus 2.5+ tablespoons of neutral vegetable oil. Additionally, if your fresh yeast is a little old, add 1/2 tsp of active dry yeast. I have also found that 5 minutes of kneading isn't quite enough, but it will be dependent upon your flour and the humidity of the day when you make this. I most often make them casserole style but in a square pan instead of round.Food.comChocolate fudge that comes from the dog-eared pages of this cookbook. To this day, my family can down a whole pan of these before they have completely set. Yummy, especially licking the bowl. *Please Note*, add extra milk (a teaspoon at a time) if mixture is to thick. Time includes setting time, that is; if this fudge makes it that long. Exceptional tasting for a simple recipe, and easy for your children to make too.Food.comThis is the tuna salad recipe I've had on a post-it note for ages.I think it came from a BC cookbook. I did a cursory search and couldn't find one with these ingredients. I make 4-6x the recipe as an appetizer, and we occasionally have leftovers for a sandwich or two the next day. I chop my veggies very finely so that it works as a salad and as a sandwich builder.
