    I love to have a big chef salad for dinner, sometimes, and there are enough ingredients to make a full plate! This recipe serves one, but you can easily multiply it for more servings. These ingredients and quantities are perfect for me, but if you don't like an ingredient, leave it out. If you love bacon, have more! Customize to your or your family's delight. I call this salad a "composed" salad, where the ingredients are placed around the plate, and all the colors are showcased. You can toss it, if you prefer. It's delicious with ranch dressing, but it would also be very tasty with blue cheese dressing.

    I searched 'Zaar for this and did not find a recipe like this. The spelling of "scaloppine" is per the original recipe. Hopefully people can still find it if the other spellings (scallopine and scallopini) fit in the title. :) My sister sent me the link for this; it's from myrecipes.com but I'm posting here because 'Zaar is really the only place I like to go for recipes. Also I wanted to streamline this a bit. On myrecipes.com, the recipe is posted in two parts; Basic Chicken Scaloppine and the lemon-cilantro addition. My favorite part about this is that it contains ingredients that are safe for my IBS. My second fave part, my sister says her 5-year old daughter (my first niece!) loves this stuff. Copied from the site, but reworded as necessary for 'Zaar's preferences. Serving size per original recipe, but I've approximated prep and cook times. I couldn't figure out how to separate the ingredient list for the Basic Chicken Scaloppine and the Lemon-Cilantro part, so I noted it in the directions. I hope to try this tomorrow. Please let me know how it turns out for you. It appears to be different from other scaloppine recipes posted here. ETA: I just made this tonight; bf really loved this. For the 2 of us, I used only 2 chicken breasts and just over half the amt of flour and a bit less oil, but I kept all other ingreds the same. Bf thought it wasn't nice of me to not make him 2 breasts, that's how much he enjoyed this! I loved this too, and will make this often. I did leave off lemon wedge, and it wasn't really missed. The flavors were wonderful!

    Cooking with unusual ingredients can be very rewarding, and we all love to impress our guests with unusual recipes and flavours. Using rose water and orange blossom water is a way of doing just this, with their unique taste, but purchasing these rare treats can be expensive. I cook with rose water and orange blossom water a lot; especially in historical (Medieval and Victorian) and Middle Eastern recipes. I have numerous highly scented old fashioned shrub roses in my old cottage style walled garden - great for rose water, and also an orange tree - great for making orange blossom water! Although I can buy both scented, flavoured waters in France and England, there is always something very satisfying about making your own - give it a go, I am VERY happy with the results. This recipe was found on a leaflet from a water distilling company in the UK; you DO need to use distilled water for these two recipes, which is easily purchased in most countries - I use it for my steam iron!! NB: Remember to use petals and blossom which are free of pesticides and traffic pollution. (Quantities and yields are dependent on how many blossoms and petals you use.........last time I made rose water, I used 4 ounces of petals and had a yeild of 4 small bottles.)

    For me, a bowl of Greek salad sparks sweet remembrance of young love and romance. Each bite of juicy tomato, sandwiched with crispy cucumber and briny olives, kindles the memory of a Friday night ritual from my early years of marriage, when my husband and I would stroll hand in hand to our local pizzeria and share a mushroom pizza alongside a Greek salad. Afterwards, we would take in a movie at our local art deco cinema before meandering home, enveloped in the warm night air.Known as “horiatiki” in Greece, but as “Greek salad” almost everywhere else, this is an achingly simple dish with peasant origins, bringing together tomatoes, cucumbers, onions, olives, and feta cheese, dressed in an abundance of olive oil, and finished with a sprinkle of oregano. However, for such an uncomplicated dish, it’s still very often misinterpreted. The primary source of this confusion is lettuce. True Greek salad does not include leafy greens. The star of the dish is, of course, tomatoes. It’s believed that this salad originated as a snack in rural Greece, where farmers would venture into the field with ingredients uncut and bite straight into the chunk of feta, followed by tomato, cucumber and raw onion.Nowadays, horiatiki has gone from village salad to worldwide staple. As with all salads that rely on basic fixings, the quality of the individual ingredients is paramount. Horiatiki should embody the brightness of summer—the tomato should be ripe and syrupy, the cucumber crisp, the olives salty, and the feta tangy, and these should all be generously lubricated with the best olive oil you can find. There are also certain rules of engagement—every forkful should offer all the wondrous elements of this salad. Hence, rather than placing an unwieldy chunk of feta on top (as is often done in restaurants) I prefer to break up the feta into smaller, bite-size pieces, where the crumbly cheese also acts as a coating for the other ingredients.My horiatiki recipe is fairly traditional, with a few small quirks. Unlike the aforementioned Greek farmers, I find raw onion rather acerbic, hence I opt for slightly sweeter shallots in my recipe, which are quickly pickled in red wine vinegar and water. Soaking onions is a trick I learned from a clever Italian cooking teacher many years ago to remove the unpleasant bite from raw alliums, while also adding a gentle acidity to the onions. I give my horiatiki a special treatment by serving it with a vibrant beet hummus. The magenta beets combine with lemon and tahini to make a beautiful, show-stopping accompaniment, providing an earthy base for this fresh salad. The natural juices of the tomatoes and vinegar meld with the creamy beet dip, forming a lovely sauce, perfect for mopping up with flatbread or crusty bread.
