Nightwish's sound tends to evolve a little based on their female vocalist, but some of my favorite bands are Within Temptation, Delain, Amaranthe, Beyond the Black, Epica, Xandria, Sabaton, Lacuna Coil, and Kamelot. Nightwish's (or to be honest Tuomas) symphonic metal sound came from (European) power metal. Bands like Blind Guardian, Kamelot, Sonata Artica, Stratovarius are a good sample of that style of power metal but with male vocalists. An other "route" to symphonic metal is Death Metal.
Rhapsody of Fire and Avantasia both uses Symphonic metal and power metal aside. Sure the music is rather different in terms of tones but remember these bands also collaborate with one another as well. And a few band members are in like 2 bands or more like example Wintersun has two members with Nightwish.
