    Several years ago, for various reasons, I was unable to buy Christmas gifts for my two sisters so instead I gave them a dinner each month for a year. That has since become a regular event on every third Sunday of the month. I usually find an intriguing recipe and prepare that, but this time I found a preparation method that I liked, but the seasoning didn’t excite me. So I punted… I love Merguez and sometimes make my own sausage. I thought that flavor would work with chicken, but I couldn’t find anything that combined merguez seasonings with anything other than ground meats. The recipe below slightly modifies the spice mixture from Christine Benlafquih’s recipe and combines it with a roast chicken prep from Alison Roman. The bird was tender, Juicy from breast to drumstick, and perfumed with the wonderful scents and flavors of those merguez spices! You will have considerably more spice mixture than you need, place it in an airtight container and store in the refrigerator for up to six months, and make you own merguez sausage!

    When i was young, my mom used to cook chicken on week days. Sunday's are special, after church we'll have goat curry with rice(yum). My mom's a great cook. In her younger days they had coal stove for cooking and the grinding stone for grinding masala. So she was happy with the modern gadgets by dad bought for her.I always wonder how she managed without a microwave!!! I'm living in a place where it's hard to find goat meat. So we switched to beef.I have a friend who is an expert in cooking beef. This is her recipe. I cooked this for so many occasions and it came out well every time.

    This is a tart with an agenda. Its roots are old fashioned and small town but don't let that fool you. It is as luscious and silky as Scarlet Johansson sauntering the red carpet. It is as lascivious as True Blood and as beaten-up as Mickey Rourke on a bad day. There are tarts and then there are tarts. The best are the kind that even your mama would like. Never suspecting or questioning what makes up its character but just enjoying it for what it is because it is so good. All the while, later, you know you are going to lick your fork like...well, lets just say it is a tart that likes to please and it will. Truly, it is like fine champagne on a Sunday afternoon. The basis of this tart has been around for a long time, the old fashioned egg custard pie, you know the one with nutmeg that has shown up at every family reunion since people started having reunions. Well, take that base and an idea from Alice Waters and her Madeira cream pots, add in the videos from Shuna Lydon about cooling your custard and then use duck eggs (again Waters' idea) which make for an even silkier tart and what you come up with is nothing less than sexy. Never fear, I have written the recipe to use chicken eggs but if you ever come across fresh duck eggs, by all means use them to make a custard. - thirschfeld

    Everyone has a dish that they’ve eaten in a certain place and time, a dish that speaks to the emotions the memory invokes. This Clay Pot Chicken was Sunday dinner at our house in Ikeja, Nigeria—a roast chicken dish sourced from our backyard. My family raised chickens, catfish, large African snails, and the occasional pig in our yard. Our garden featured dozens of leafy greens, vegetables, and fruit trees. Although Ikeja is more suburban than the lively districts of Lagos most visitors may encounter, it is still very much a part of the metropolitan area. Lush ingredient gardens are not uncommon in the homes of Lagosians; “backyard-to-table” is traditional to the cuisine.According to my mother’s recipe, the live chicken is prepped that afternoon, the vegetables and herbs collected after the feathers were off the bird, and the clay pot soaked the night before. I had the tough job of picking out the herbs she wanted, a task I admit I didn't always enjoy. Her kitchen window opened up into the garden, and she would order me around for precisely what she was looking for. She ruled her kitchen with a silent finger pointing me this way and that.This recipe is an adaptation for my kitchen. A store-bought chicken is trussed, rubbed with an infused compound butter—Alligator Pepper and Makrut Lime Butter, in this case—then nestled on a layer of seasonal vegetables. Lemongrass, whole lime slices, and ginger add a punchy fragrance and a tangible sweetness to the pot. In the oven, the delicious herb-spiced chicken drippings coat the vegetables and citrus slices, which all gently caramelize as the chicken cooks.My recipe does omit the clay pot, and uses a Dutch oven instead, but if you have an earthenware pot handy, that will get you a little bit closer to the Sundays I remember back home. I don’t make this every Sunday like my mother did, but I can say I’ve eaten this dish more times in my life than any other meal.

    A note to readers: Growing up in a Jamaican family, food was always a focal point. The earlier version of Jamaican Rice and Peas posted here was an inaccurate representation of a dish that is true to my culture and the many people that enjoy it. Culturally relevant recipes should be developed with thoughtful consideration of their origin. Here, I'm proud to share my mom's recipe for Jamaican rice and peas. Jamaican rice and peas—seasoned with the special trinity of thyme, scallion, and garlic—is a staple dish of the island. Like clockwork, my mom cooked Jamaican rice and peas with a baked chicken every Sunday. Its woodsy flavor is heightened by the addition of whole pimento seeds (aka allspice berries) and its subtle heat comes from the Scotch bonnet pepper. We always had Scotch bonnet peppers in the refrigerator and my mom would cut slivers from them to add to almost everything. When used whole, the pepper lends a slightly fruity flavor without the intense heat because the seeds and flesh are not exposed. The very hot Scotch bonnet pepper can be found in farmers' markets or Caribbean grocery stores, but a habanero pepper is a good substitute. I like to use dried dark red kidney beans. They are often featured in this dish, but you can also use green pigeon peas (aka gungo peas), which are also commonly used. The coconut milk is infused with the reddish tint of the beans, which gives the rice its signature blush. Plus: Jamaican Jerk Chicken
